The One Camping Recipe You Shouldn’t Leave Home Without

Trail Mix Cookies

Ingredients:

  • ½ cup applesauce
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 ½ teaspoons vanilla extract
  • 2 egg whites
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • 1 ¼ cups quick cooking oats
  • ½ cup white, semi-sweet, or dark chocolate chips
  • ½ cup chopped pecans, walnuts, or macadamia nuts
  • ⅓ cup dried cranberries, raisins, or dried apricots

Note: Take a look at those last three things on the list. Don’t let it overwhelm you! This is easy. Pick one chocolate, one nut, and one fruit. That’s it. If it sounds good in trail mix, it’ll be delicious in this recipe! If you need some help, try these different combinations:

  • Dark chocolate chips, chopped walnuts, and coarsely chopped dried apricots
  • Semi-sweet chocolate chips, pecans, and golden raisins
  • White chocolate chips, macadamia nuts, and cranberries

Directions:

  • Preheat oven to 350 degrees and prepare cookie sheets by lining them with parchment paper.
  • Beat together: applesauce, both sugars, and vanilla. Set aside.
  • In a separate bowl, beat the egg whites with a hand mixer on high speed until frothy.
  • Gently fold the egg white froth into the applesauce mixture, stirring to combine.
  • In a third bowl, whisk together the flour, baking soda, salt, and cinnamon. Once whisked, add this to the wet ingredients, stirring gently until just combined – don’t overmix.
  • Add the oats and the chocolate-nuts-fruit of your choice, mixing until well combined.
  • Chill the dough in the refrigerator for 20 minutes to an hour.
  • Drop by large rounded tablespoons onto cookie sheets, about 2 inches apart.
  • Bake 9-10 minutes or until golden brown, removing to wire racks to cool.
